Ingredients
- 4 cups romaine lettuce chopped
- 1 cup bell pepper , diced
- 2 Roma tomato diced or sliced
- 1-2 cups cucumber English, chopped
- 1/4-1/3 cup onion red, chopped
- ¼ cup feta cheese plus extra if desired, crumbled
CREAMY GREEK DRESSING
- ⅓ cup extra virgin olive oil
- 2 TBSP red wine vinegar
- 1 TBSP Dijon mustard
- 1 clove garlic peeled
- ⅓ cup feta cheese crumbled
- ¼ cup yogurt plain, Greek
- ½ tsp parsley dried
- ¼ tsp oregano dried
- ¼ tsp basil dried
- ⅛ tsp salt
- ⅛ tsp black pepper
- 2 TBSP water
Instructions
- Combine all dressing ingredients in a food processor or blender and puree until smooth. You can also use an immersion blender (my favorite!)
- No gadgets? No problem! First mash the feta then peel, smash, and mince the garlic up into a paste. Combine with remaining dressing ingredients in a small mason jar and shake vigorously until emulsified.
- Allow dressing to sit while you chop and toss together your salad, then shake again before serving.
- Pour the dressing over salad and mix to coat. Enjoy!

- The dressing keeps well in the refrigerator for several days, making it convenient to prepare extra for later use.
