Ingredients

  • 4 cups romaine lettuce chopped
  • 1 cup bell pepper , diced
  • 2 Roma tomato diced or sliced
  • 1-2 cups cucumber English, chopped
  • 1/4-1/3 cup onion red, chopped
  • ¼ cup feta cheese plus extra if desired, crumbled

CREAMY GREEK DRESSING

  • cup extra virgin olive oil
  • 2 TBSP red wine vinegar
  • 1 TBSP Dijon mustard
  • 1 clove garlic peeled
  • cup feta cheese crumbled
  • ¼ cup yogurt plain, Greek
  • ½ tsp parsley dried
  • ¼ tsp oregano dried
  • ¼ tsp basil dried
  • tsp salt
  • tsp black pepper
  • 2 TBSP water

Instructions

  1. Combine all dressing ingredients in a food processor or blender and puree until smooth. You can also use an immersion blender (my favorite!)
  2. No gadgets? No problem! First mash the feta then peel, smash, and mince the garlic up into a paste. Combine with remaining dressing ingredients in a small mason jar and shake vigorously until emulsified.
  3. Allow dressing to sit while you chop and toss together your salad, then shake again before serving.
  4. Pour the dressing over salad and mix to coat. Enjoy!

  • The dressing keeps well in the refrigerator for several days, making it convenient to prepare extra for later use.
