Mediterranean Ground Beef Stir Fry

This Mediterranean Ground Beef Stir Fry brings together sautéed red bell peppers, blistered cherry tomatoes, and wilted spinach with seasoned ground beef. The combination creates a colorful, tender, and savory meal accented with garlic and oregano. Optional crumbled feta adds a creamy, tangy finish. This dish offers flexibility to swap veggies or add Mediterranean touches like olives or red pepper flakes, making it useful for weekly meal prep with simple ingredients that store well.

Description

The Mediterranean Ground Beef Stir Fry combines key ingredients such as red bell peppers, cherry tomatoes, spinach, and minced garlic sautéed in olive oil, forming a vibrant vegetable base. Ground beef cooked with oregano, salt, and pepper adds a hearty, savory element. The vegetables are cooked until tender and the tomatoes become saucy, melding flavors before uniting with the beef. Adding crumbled feta cheese at the end brings a light creaminess that complements the earthy and fresh vegetables.

The final stir fry balances the sweetness of bell peppers and tomatoes with the richness of beef and garlic, featuring a pleasant mix of textures from tender spinach and crisp peppers. Cooking steps include separately sautéing veggies until wilted and blistered, browning and draining the beef, then combining all ingredients to warm through and develop flavor integration.

This versatile stir fry can be enjoyed as a standalone meal or paired with Mediterranean sauces like tzatziki or hummus for added character. It reheats well and lasts for several days refrigerated in an airtight container, suitable for meal planning. Variations can be made by substituting spinach with kale or zucchini and incorporating optional seasonings or vegetables.

Practical tips include cooling the dish before refrigeration to maintain texture and skipping feta prior to freezing for easier storage. Thawing and reheating should be done gently on stovetop or microwave to preserve flavors and texture.

Ingredients

Servings
  • 1 tablespoon olive oil
  • 1 red bell pepper deseeded and diced
  • 1 pint cherry tomato sliced in half
  • 8 ounces baby spinach small tub
  • 4 garlic minced, cloves
  • 2 green onion thinly sliced, white and green parts separated
  • 1 pound ground beef
  • ½ teaspoon oregano dried
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground
  • 2 tablespoons feta cheese optional, crumbled

Instructions

  1. Cook the tomatoes and bell pepper. Heat the oil in a large pan on medium-high heat. Add the bell pepper and cherry tomatoes and saute for 4 to 5 minutes, until the tomatoes are blistered and saucy. Add the garlic and stir another minute.
  2. Add the spinach. Add the spinach and white parts of the green onion. Note that the spinach will take up most of the pan, but it will wilt down. Stir for another 2 to 3 minutes, until the spinach has wilted. Remove these veggies to a plate.
  3. Cook the beef. Add the ground beef, oregano, salt, and black pepper to the pan, and use a spatula to break up the meat. Cook the ground beef until it's browned, then drain off any excess grease.
  4. Garnish and serve. Transfer the veggies back to the pan, add the green parts of the green onion, and stir until warmed through. Garnish with crumbled feta before serving.

Notes

  • Store the stir fry in an airtight container in the refrigerator for 3 to 4 days to enjoy over several meals.
  • Cool the dish completely before sealing to maintain quality during storage.
  • For freezing, omit the feta cheese and freeze in a suitable container for up to 3 months; thaw overnight in the refrigerator before reheating.
  • Customize flavors by adding red pepper flakes, kalamata olives, or sun-dried tomatoes while cooking.
  • Vegetable substitutions like zucchini or kale can be used in place of spinach depending on preference or availability.
