Melktert (Milk Tart)

Melktert is Afrikaans for milk tart, and is a dessert which has a sweet pastry crust and a creamy custard filling made from eggs, flour, milk and sugar.

Ingredients

Servings

Pastry

  • 1 cup flour
  • 1 teaspoon baking powder
  • salt a pinch
  • ¼ cup sugar
  • ¼ cup butter
  • ½ egg

Filling

  • cups milk
  • tablespoon flour
  • tablespoon butter
  • tablespoon cornflour
  • cup sugar
  • salt a pinch
  • 1 teaspoon vanilla essence
  • egg
  • 1 teaspoon ground cinnamon

Instructions

Pastry

  1. Cream the butter and sugar until smooth. Add the egg.
  2. Add dry ingredients and mix well to form a smooth dough.
  3. Press into greased pie plate.
  4. Bake at 350F/180C for approximately 20 minutes or until golden.

Filling

  1. Boil milk, sugar and butter.
  2. Beat eggs with dry ingredients.
  3. Pour hot mixture over cold and mix well. Add vanilla essence.
  4. Allow to thicken on the stove.
  5. Pour filling into pastry-lined pie dish. Allow to cool and then sprinkle with cinnamon.
