Microwave Baby Potatoes

Whether you call them microwave baby potatoes, new potatoes, mini potatoes, or small potatoes, they are amazing steamed in the microwave.

Ingredients
- 500 g baby potatoes
- 1 Tbsp rosemary
- 1 Tbsp parsley
- salt & pepper
- 1 Tsp Light I Can’t Believe It’s Not Butter optional

- Steamer Bowl
Instructions
- Place one tablespoon of water in the bottom of your steamer basket.
- Give your baby potatoes a good wash with a sieve and then add to the steamer basket. Add your seasonings and mix with your hands for an even coating.
- Place the lid on the steamer and then place in the microwave.
- Microwave for 6 minutes. Though check on it at 4 minute as your wattage might be higher than ours.
- When it beeps do a fork test to double check that your baby potatoes are fork tender.
- Load the potatoes into a serving dish that is microwave safe, being careful to not add the water from the steamer bowl. Then cover the top with butter or margarine. Microwave for a further 30 seconds to melt the butter before serving.
Notes
- Optional – I love my microwave new potatoes with melted butter, but it is totally optional.
- Quantity – I did 10 medium/large new potatoes in my microwave steamer bowl. You can do the same or more or less, depending on how many people you are feeding.
