Mincemeat Pie

Making mincemeat pie doesn't get easier than this! Adding fresh apples and your choice of nuts to prepared mincemeat makes for an easy and delicious pie!

Ingredients

Mincemeat Filling

  • 2 cups mincemeat pie filling prepared
  • 1 ½ cups pecans or walnuts, chopped
  • 2 apple cored, and chopped into small pieces, peeled
  • ½ cup brown sugar packed
  • ¼ cup rum
  • 1 teaspoon lemon zest
  • 1 teaspoon orange zest

Pie Pastry

  • one recipe pie crust double 9 inch crust

Instructions

  1. Combine all of the ingredients for the filling into a medium sized bowl, mixing well. Cover and refrigerate overnight.
  2. Take the filling out of the refrigerator, give it a big stir and let come to room temperature.
  3. Preheat your oven to 425 °F. Place the oven rack in the second from bottom shelf position.
  4. Prepare the pie pastry crusts. Place one in the bottom of a 9 inch pie plate. Stir the filling again and then pour into the pie shell.
  5. Place the second pie crust on top. Crimp the edges and cut slits into the top. Alternatively you can make this a lattice top if desired.
  6. Bake in the preheated oven for 40 minutes or until the filling starts bubbling. If needed, cover the edges with foil to prevent them from overbrowning. When the crust is browned and the filling is bubbling, it is done. Remove and cool on a rack.
  7. Slice and serve warm or cold.
