Mojito Jello Shots Recipe

These Mojito Jello Shots blend fresh or thawed raspberries with coconut-flavored rum and gelatin to create a set, fruity cocktail treat. The raspberry puree is combined with rum and a gelatin mixture, chilled until firm, and cut into bite-sized shapes. Garnished with shredded coconut and mint or whole raspberries, they offer a playful way to enjoy the mojito flavor in a fun, solid format.

Description

The recipe starts by pureeing raspberries and straining out the seeds to yield a smooth fruit base. Mixing this with coconut rum incorporates the characteristic mojito taste. Dissolving gelatin in sweetened water ensures the shots will set properly once chilled. Once combined and poured into a pan, the mixture needs several hours in the refrigerator to firm up.

After setting, the gelatin is cut into smaller pieces or shapes using a cookie cutter. Garnishes of shredded coconut and either mint leaves or raspberries complement the tropical and fresh notes. These shots are served cold and provide a jiggly, fruity texture with the alcoholic punch of a classic mojito.

The preparation time does not include chilling time needed for the gelatin to set, which must be factored in for planning. Handling and cutting require patience to maintain neat pieces.

Ingredients

Servings
  • ¾ cup raspberry fresh or frozen and thawed
  • ¾ cup Malibu or other coconut flavoured rum
  • ¼ cup water
  • ¼ cup granulated sugar
  • 5 teaspoons gelatin unflavored
  • mint leaves to garnish
  • shredded coconut
  • raspberries

Instructions

  1. Put the raspberries into your blender and blend on high speed until pureed. Strain the raspberries through a fine-mesh sieve to remove the seeds.
  2. In a medium-sized bowl, mix the raspberry puree and rum.
  3. Add the water and sugar to a small pot over low heat. Once the sugar dissolves, add the gelatin and stir until it dissolves.
  4. Pour the gelatin water into the rum and raspberry mixture and mix well. Pour it into a small, shallow pan and then put the pan into your fridge for several hours, until the shots set.
  5. Cut it into squares or circles using a cookie cutter and garnish with shredded coconut and either a mint leaf or a raspberry

Notes

  • Preparation time excludes the several hours needed for the gelatin mixture to fully set in the fridge.
