                                Ingredients
- 1 large yellow onion finely chopped
 - 6 large tomatoes seeded and finely chopped
 - 1 English cucumber peeled and finely chopped
 - 1 red bell pepper seeded and finely chopped
 - 3 tablespoons olive oil
 - 3 tablespoons chopped parsley
 - 3 tablespoons chopped chives
 - 1 tablespoon lemon juice
 - Kosher salt and pepper to taste
 
Instructions
- In a bowl combine all the ingredients together and keep in the fridge until ready to serve .
 - Serve cold.
 
Notes
- You can make this up to 4 hours ahead. It will get juicier as it sits so keep that in mind, and it's also why you don't want to make it the day before.
