Mozzarella Stuffed Chicken Meatballs
Description
Mozzarella Stuffed Chicken Meatballs use ground chicken enhanced with oregano, crushed red pepper, garlic powder, and black pepper, binding the mixture with egg and almond flour. Each meatball is carefully stuffed with a cube of part-skim mozzarella cheese, ensuring a melty, creamy center. After rolling and browning in oil on all sides, the meatballs finish baking in a 350°F oven. They are then simmered gently in marinara sauce, combining the tender meat and melted cheese with the sauce's acidity. This method gives a balanced flavor and moist texture.
The meatballs are substantial in size, about two tablespoons each, and their rich texture from the cheese filling contrasts with the herbed chicken exterior. The use of almond flour keeps the mixture light. Serving the meatballs hot, with fresh Parmesan grated over pasta, complements the dish’s Italian-inspired profile and creates a satisfying, complete meal.
