Muscovado Chocolate Truffle

Muscovado Chocolate Truffles combine muscovado sugar and heavy cream heated gently then whisked into rich 70% dark chocolate to form a glossy ganache. Once cooled and chilled, the ganache is shaped into spheres and coated in a mixture of cocoa powder and muscovado sugar for a textured sweet finish. These truffles are best served at room temperature, offering a balance of deep chocolate bitterness tempered by caramel-like muscovado notes.

Description

The recipe begins by bringing muscovado sugar, sea salt, and double cream to a simmer and pouring it over fine dark chocolate, then whisking until smooth and emulsified to create a ganache. After chilling, the ganache is shaped into truffles by hand and rolled in a mixture of cocoa powder and muscovado sugar, lending a lightly sweet, rustic coating. The use of muscovado sugar both in the ganache and coating imparts a subtle molasses flavor, distinguishing these truffles from standard chocolate varieties.

Best enjoyed at room temperature, serving suggestions include placing a truffle in hot milk to create a rich, chocolatey drink after a short steep. The truffles can be stored refrigerated or frozen, making them convenient for keeping on hand for dessert or gifts.

Ingredients

Servings
  • 100 grams muscovado sugar
  • pinch salt sea salt
  • 250 grams cream double
  • 250 grams chocolate 70% dark finest chocolate, broken into pieces

FOR ROLLING

  • 50 grams cocoa powder
  • 50 grams muscovado sugar

Instructions

  1. Bring the sugar, salt and cream to a simmer. Pour on to the chocolate in a bowl and whisk well until emulsified and glossy. Allow the ganache to cool, then refrigerate.
  2. When you are ready to roll your truffles, mix the cocoa powder and sugar together well until fully combined.
  3. Now, take a generous amount of the ganache and, having dipped your hands into the dry mixture, form your desired sphere – or feel free to leave the truffles rustic.
  4. Once shaped, re-roll the truffles through the dry powder to coat them. Store in an airtight container in the fridge – or even the freezer if you want a constant supply of emergency truffles.
  5. But be sure to enjoy them at room temperature.

How to Fully Enjoy the Muscovado Chocolate Truffles:

  1. Bring a mugful of milk to a simmer, place one muscovado truffle in the bottom of your cup, then pour on the hot milk and allow to stand for 2 minutes.
  2. You can either drink the warm milk and enjoy the molten chocolate at the bottom, or give everything a good stir for a soothing hot chocolate milk.
  3. Skewer the truffles on to cocktail sticks and refrigerate. Melt a small bowl of your favorite chocolate over a pan of hot water until smooth.
  4. Place your truffles around the dish of melted chocolate, then dip and indulge.
