My gran's pumpkin fritters | Pampoen koekies

My gran's pumpkin fritters, known as Pampoen koekies, are soft fried batter cakes made with cooked pumpkin puree mixed with flour, baking powder, sugar, egg, and milk. Fried until golden brown, they offer a tender texture and subtle sweetness. Served with a thick, salted caramel sauce, they combine warm, comforting flavors perfect for dessert or teatime.

Description

This recipe uses cooked and pureed pumpkin blended with flour, baking powder, caster sugar, egg, milk, and a pinch of salt to form a smooth batter. Spoonfuls are deep-fried in neutral oil until golden and cooked through, yielding fritters with a soft interior and lightly crisp exterior.

The accompanying caramel sauce is made by cooking sugar, cream, vanilla extract, butter, golden syrup, and sea salt flakes over medium heat until thick and glossy. This sauce balances the pumpkin fritters with its rich sweetness and mild saltiness.

Pampoen koekies work well as a dessert or an indulgent snack and offer a traditional take on pumpkin in a fried sweet form. The batter's texture ensures the fritters are tender, while frying gives appealing color and slight crunch.
