No-Bake Brownie Bites

No-Bake Brownie Bites combine Medjool dates, cocoa powder, hemp seeds, walnuts, and almond butter into small, firm balls that require no baking. The sticky date base binds the chocolatey, nutty ingredients into bite-sized snacks with a chewy yet tender texture. Rolling them in extra cocoa adds a mildly bitter cocoa dusting. These energy-dense bites are easy to prepare and store well in the refrigerator or freezer.

Description

This recipe blends pitted, soft Medjool dates with cocoa powder (or alternatives like carob for caffeine-free options), hemp seeds, chopped walnuts, creamy almond butter, salt, and vanilla extract in a food processor. The mixture is pulsed until it sticks together, forming a cohesive dough.

Portioned into roughly 1.5 tablespoon scoops, the dough is rolled by hand into smooth balls. Rolling them in additional cocoa powder enhances the chocolate flavor and adds a dry exterior contrast. These bites have a chewy, sticky texture from the dates balanced by crunchy walnuts and hemp seeds.

They are ready to eat immediately and ideal for a quick snack or dessert without heating. Leftovers stay fresh covered in the refrigerator for up to two weeks or can be frozen for up to one month.

  • 1 ¼ cup Medjool dates (~14 dates, measured after pitting // if dry, soak in warm water for 15 minutes, then drain and pat dry)
  • 1/4 cup cocoa powder or sub carob for chocolate-free / caffeine-free, organic, or cacao; plus more for rolling
  • 3 Tbsp hemp seed
  • 1/4 cup walnuts raw, roughly chopped
  • 1 ½ Tbsp almond butter (creamy salted // or sub other nut or seed butter of choice)
  • 1 pinch salt use more or less depending on saltiness of nut butter, sea salt
  • 1/4 tsp vanilla extract

Instructions

  1. To a food processor add pitted dates, cocoa or cacao powder, hemp seeds, walnuts, almond butter (or other nut/seed butter), salt, and vanilla.Note: If you don’t have a food processor, you can try using a blender, but dates can be notoriously tough for blenders due to their sticky nature, so use a low speed if possible and pulse instead of blending.
  2. Pulse until the mixture is well blended and starts to clump together (~30 seconds - 1 minute). If it’s too dry or crumbly and it doesn’t stick together when pressed between two fingers, add more nut butter or pitted dates (just ensure your dates are sticky and fresh, or it will only further dry out the mixture.)
  3. Scoop out 1 ½ Tbsp amounts (we love this scoop) and gently roll into balls. As the original recipe is written, ~14 balls.
  4. Enjoy immediately as is, or roll in extra cocoa, cacao, or carob powder for an extra chocolaty exterior. Store leftovers covered in the refrigerator up to 2 weeks, or in the freezer up to 1 month (often longer). Let come close to room temperature before enjoying for best texture (in our opinion).

Notes

  • Use fresh, sticky Medjool dates for best binding; soak dry dates in warm water for 15 minutes and pat dry before using.
  • If mixture feels too dry to stick together, add more nut butter or sticky dates.
  • Store brownie bites covered in the refrigerator up to 2 weeks or freeze up to 1 month.
