No-Bake Christmas Date Cookies

No-Bake Christmas Date Cookies are energy-rich, bite-sized balls made from soaked Medjool dates, coconut oil, almond milk, ground almonds, cocoa powder, rum extract, and salt. Coated in powdered sugar or nuts, they offer a moist, chewy texture with chocolate and nutty flavors, prepared without baking.

Description

This recipe starts with soaking Medjool dates in hot water to soften them before blending with coconut oil in a food processor. Ground almonds, almond milk, cocoa powder, rum extract, and a pinch of salt are added to form a smooth and cohesive mixture. After chilling in the refrigerator, the mixture is shaped into small balls and rolled in powdered sugar or alternative coatings such as coconut or nuts for texture and sweetness contrast.

The resulting cookies are rich in natural sweetness and moistness from the dates, balanced by the cocoa and nut flavors. They require no oven time, making them convenient treats during the holiday season or as healthy snacks.
