No-Bake Christmas Date Cookies
Description
This recipe starts with soaking Medjool dates in hot water to soften them before blending with coconut oil in a food processor. Ground almonds, almond milk, cocoa powder, rum extract, and a pinch of salt are added to form a smooth and cohesive mixture. After chilling in the refrigerator, the mixture is shaped into small balls and rolled in powdered sugar or alternative coatings such as coconut or nuts for texture and sweetness contrast.
The resulting cookies are rich in natural sweetness and moistness from the dates, balanced by the cocoa and nut flavors. They require no oven time, making them convenient treats during the holiday season or as healthy snacks.
Ingredients
- 2 cups Medjool dates pitted; 340g or 20 individual; Natural Delights brand
- 4 TBs coconut oil 40g
- 4 TBs almond milk or milk of your choice
- 1.5 cups ground almonds 120g
- ⅔ cup cocoa powder 80g
- ½ teaspoon rum extract
- Pinch salt
- powdered sugar can also coat with coconut, additional cocoa powder or ground nuts like almonds or pistachios
Instructions
- In a medium sized bowl, soak Medjool dates in boiled water for 10 mins.
- In the bowl of a food processor equipped with the all-purpose blade, combine the soaked dates and coconut oil. Process until fully combined - you may need to scrape the walls of the food processor a few times.
- Add the ground almonds, almond milk, cocoa powder, rum extract and salt. Process until a nice, smooth and cohesive mixture is created.
- Transfer Christmas date cookie mixture to refrigerator and cool for at least one hour, or more.
- Pour powdered sugar or your choice of coating onto a large plate. Using wet hands, form chocolate date mixture into 3-cm balls. Roll the date balls in powdered sugar to coat.
