No-Bake Monster Protein Cookie Dough Bars

No-Bake Monster Protein Cookie Dough Bars combine a firm chocolate base with a creamy peanut butter cookie dough layer studded with mini M&M’s. The texture balances the smooth chocolate layer with the chewy oats and oat flour in the dough, while the protein powder adds a nutritional boost. These bars require chilling in the freezer to set and create a conveniently portable snack or treat that doesn’t require baking, making them suitable for meal prep or quick indulgence.

Description

No-Bake Monster Protein Cookie Dough Bars consist of two main components: a solid chocolate layer and a peanut butter-based cookie dough layer enriched with oat flour, rolled oats, vanilla protein powder, and a touch of sweetener. The chocolate chips melted with coconut oil form a stable base once frozen. The cookie dough layer incorporates peanut butter and butter, resulting in a soft yet firm texture when chilled. Mini M&M’s folded into the dough and sprinkled on top add bursts of chocolate candy sweetness and a slight crunch.

The preparation involves melting the chocolate and freezing it to solidify, then mixing the cookie dough ingredients until a pliable dough forms. After a brief freeze to ease folding in the candy, the dough is spread on the hardened chocolate and chilled further to set. The lack of baking means these bars retain a fresh, soft texture unlike traditional baked treats.

These bars can be eaten chilled as a protein-rich snack or dessert. Their firmness from freezing aids in portability and portion control. The recipe’s gluten-free potential (if certified gluten-free oats are used) and the option for dairy-free substitutions cater to some dietary considerations, while the combination of oats, peanut butter, and protein powder offers sustained energy.

To customize, use your preferred nut butters or protein powders, and consider alternative mix-ins for the candy layer. Frequent storage in the freezer or refrigerator preserves their texture and prevents melting.

Ingredients

Servings

Chocolate Layer:

  • 1/2 cup semi sweet chocolate chips 120g
  • 1/2 tsp coconut oil

Cookie Dough Layer:

  • 1/3 cup peanut butter 75g
  • 1/3 cup butter or room temperature regular butter, light, 75g
  • 1/2 cup oat flour 64g
  • 1/2 cup old fashioned oats 40g
  • 1/4 cup vanilla protein powder 30g
  • 1/4 cup brown sugar I used golden monk fruit sweetener, 48g
  • pinch salt more as needed (peanut butters vary in saltiness
  • 1 Tbsp milk plus more as needed
  • 1 oz. mini m&m's divided, 30g

Instructions

  1. Line an 8x8-inch pan with parchment paper and set aside.
  2. Add the chocolate chips and coconut oil to a microwave-safe bowl and heat in 20-30 seconds intervals, stirring in between, until melted.
  3. Pour the melted chocolate into the bottom of the pan lined with parchment paper; use a small spatula to spread out evenly. Add to the freezer until the chocolate hardens, about 10 minutes.
  4. Meanwhile to a medium-sized bowl, add the peanut butter, butter, oat flour, oats, protein powder, brown sugar and salt. Mix well to combine. Add 1 tablespoon of milk as needed until you get a dough to form, be careful not to add too much!
  5. Freeze dough for 5-10 minutes (this helps prevent the candy color from coming off the M&M's but you can skip), then fold in half the M&M's.
  6. Add the cookie dough on top of the chocolate layer and spread out evenly/press down well. Add the remainder of the M&M’s across the top and press down one last time.
  7. Place back in the freezer for at least 30 minutes before slicing and enjoy. Keep stored in the freezer.
