No Churn Dulce de Leche Ice Cream
Description
No Churn Dulce de Leche Ice Cream relies on whipping cold heavy cream to stiff peaks before folding in dulce de leche, which gives a rich caramel taste. The process requires no churning, simplifying homemade ice cream preparation. The ice cream is layered with crushed digestive biscuits—a type of mildly sweet cookie—adding a subtle crunch and a complementary flavor.
Swirling additional dulce de leche on top before freezing results in appealing caramel ribbons that enhance each bite. Freezing for at least four hours sets the mixture into a smooth and scoopable dessert.
The recipe notes suggest various types of digestive biscuits commonly used, including Biscoito de maizena, Galletas Maria, Goya Maria cookies, or graham crackers in a pinch. These choices provide slight variations in texture and taste but all work well with dulce de leche.
Ingredients
- 1 cup heavy whipping cream
- 1 oz dulce de leche can
- 50 grams digestive biscuits see note below for examples
Instructions
- Open the can of dulce de leche. Scoop out 4 tablespoons into a bowl and set aside to use to make swirls later.
- Whip the cream until stiff peaks form. (This will take some time, depending on how quickly you're whipping the cream.) You want to work with cold cream and cold bowl to ensure maximum creaminess.
- Add in the rest of the can of dulce de leche. Whip until all is combined and frothy.
- Pour half of the ice cream mixture into a freezer-safe container.
- Plop 2 reserved tablespoons of dulce de leche. Swirl using the back of a spoon in a figure eight movement.
- Sprinkle on some of the crushed digestive biscuits on top.
- Pour the rest of the ice cream mixture on top. Add the remaining dulce de leche, and swirl into the ice cream. Sprinkle the rest of the crushed digestive biscuits on top.
- Wrap with plastic film and freeze at least 4 hours.
Bom Apetite!
Notes
- Use cold heavy cream and a chilled bowl to achieve better whipping results for a creamy texture.
- Digestive biscuit options include Brazilian Biscoito de maizena, Galletas Maria, Goya Maria cookies, or graham crackers as a substitute.
- Swirling reserved dulce de leche in layers creates caramel ribbons without overpowering the base.
- Freeze the assembled ice cream for at least four hours to firm up properly before serving.
