No-Churn Jasmine Tea Ice Cream

No-Churn Jasmine Tea Ice Cream is a creamy frozen dessert infused with floral jasmine and green tea flavors. It uses heavy cream gently heated with dried jasmine flowers and green tea leaves to extract delicate aromas, then mixed with sweetened condensed milk and vanilla before whipping and freezing without an ice cream maker.

Description

No-Churn Jasmine Tea Ice Cream starts by heating heavy cream just to scalding, infusing it with dried jasmine flowers and green tea leaves to impart subtle floral and vegetal notes. After steeping and straining, the chilled tea-infused cream is whipped to a light, airy texture. Sweetened condensed milk and pure vanilla extract are folded in to add sweetness and richness, blending smoothly to create a creamy base.

The ice cream sets without churning by folding the ingredients carefully and freezing, making this recipe accessible without specialized equipment. The resulting ice cream is velvety with gentle tea flavors, combining aromatic jasmine and fresh green tea nuances. Vanilla adds balance and depth.

This ice cream can be served as a delicately flavored dessert, suitable for those who enjoy subtle floral tastes. It complements light desserts or can be enjoyed on its own as a refreshing treat.

Ingredients

Servings
  • 200 ml heavy whipping cream 36% MF
  • 2 tablespoon jasmine flowers culinary, dried
  • 1 tablespoon green tea leaves loose
  • 80 ml sweetened condensed milk
  • 1 teaspoon vanilla extract pure

Instructions

  1. Pour the heavy whipping cream into a small saucepan and heat over medium-low heat, just until scalding hot. (Don't boil).
  2. Add in the dried jasmine flowers and green tea leaves.
  3. Give the cream a stir and remove from heat.
  4. Cover with a lid and let it cool, about 30 minutes at room temperature.
  5. Strain out the tea leaves and jasmine flowers using a sieve and place the infused cream into a jar or container to chill in the refrigerator.
  6. Let the cream chill at least 6 hours, or overnight. (We want the cream to be nice and cold).
  7. The next day, measure out the condensed milk and vanilla extract into a large bowl. Give it a stir.
  8. Transfer the cold tea-infused cream to a mixing bowl and whip in a stand mixer (or by hand) until almost stiff peaks.
  9. Transfer ⅓rd of the tea-infused cream into the condensed milk mixture to lighten.
  10. Add the entire condensed milk mixture back to the tea-infused cream and whisk by hand to incorporate, until stiff.
  11. Transfer the mixture into a clean freezer-safe jar or container and freeze overnight, at least 8-12 hours.
