  • 1 can cream of chicken soup 10.5 ounces
  • 1 can cream of mushroom soup 10.5 ounces
  • 2 cups chicken stock
  • 1 package onion soup mix 1 ounce
  • 2 cups white rice
  • 2 pounds boneless skinless chicken breasts
  • salt and pepper optional

Instructions

  1. Preheat oven to 350 degrees F. Spray a 13x9-inch casserole dish with cooking spray and set it aside.
  2. Add both cans of soup, chicken stock, and onion soup mix to a bowl. Mix until smooth. Stir in the uncooked rice.
  3. Pour everything into the prepared baking dish. Season the chicken with salt and pepper (optional) and place in the middle of the rice mixture.
  4. Cover tightly with aluminum foil and bake in the preheated oven for 1 hour and 15 minutes. Don't peek!
  5. Remove from the oven and let sit for 5-10 minutes before removing the foil. Use a meat thermometer to ensure the chicken's internal temperature has reached 165 degrees F.
  6. Slice or shred the chicken and serve.

  • Top with crispy fried onions for a delicious texture.
  • Since the recipe calls for canned soup, which already contains salt, it's best to go easy on the additional salt. Remember, you can always add more later but can't take it away.
