Oats Kheer (Sweetened Oatmeal with Cardamom, Nuts & Raisins)
Description
This Oats Kheer recipe begins by roasting rolled oats in ghee to develop a nutty aroma, which enhances the depth of flavor. The oats then cook slowly in a mixture of whole milk and water, sweetened with sugar and infused with aromatic spices like cardamom and strands of saffron, which add color and subtle fragrance. The pressure cooker or stovetop methods both yield a rich, creamy pudding with oats softened to a melting consistency.
The texture is thick and creamy, with the sweetness balanced by the warmth of cardamom and the unique aroma of saffron. Garnishes of roasted nuts and raisins provide contrasting textures and additional richness that complement the smooth kheer.
Typically served as a dessert, this kheer can be enjoyed warm or chilled depending on preference and occasion. The slow cooking method allows the flavors to meld beautifully, making it an inviting finish to a meal or a treat on its own.
For variations, steel-cut oats can be used with longer cooking times. Vegan versions can be made by substituting dairy milk with plant-based milk. Adding jaggery instead of sugar is possible but should be done after cooking to prevent curdling. Roasting nuts in ghee prior to cooking intensifies their flavor. The pudding thickens upon cooling; adjust with milk if needed before serving.
