Ingredients
- 6 chicken thighs , bone in and skin on
- 1/4 cup vegetable oil
- 3 cloves garlic , minced
- 3 tablespoons Old Bay seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon coarse ground black pepper
- 2 pounds Russet potatoes , peeled and cut into 1 inch chunks
- 1 1/2 cups corn
Instructions
- Preheat oven to 375 degrees.
- Mix together all the ingredients in a large bowl.
- Add the chicken, skin side up to the baking pan and put the potatoes and corn around it in the pan (do not cover the chicken with the vegetables).
- Roast for 45-55 minutes, until chicken is crispy and the internal temperature reaches 165 degrees.
