Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons Old Bay seasoning
- 1 tablespoon olive oil
- 4 large flour tortillas
- ½ cup cooked rice (white or brown)
- ½ cup black beans, rinsed and drained
- ¼ cup shredded Monterey Jack cheese (or your favorite cheese)
- Optional toppings: shredded lettuce, diced tomatoes, diced red onion, avocado slices, salsa, sour cream, lime wedges, chopped cilantro
Instructions
- Season shrimp: In a medium bowl, toss the shrimp with the Old Bay seasoning.
- Cook shrimp: Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Do not overcook.
- Warm tortillas: While the shrimp are cooking, warm the tortillas according to package directions (microwave, skillet, or oven).
- Assemble burritos: Lay out the warm tortillas. In the center of each tortilla, place some cooked rice, black beans, cooked shrimp, and shredded cheese.
- Add toppings: Top with your desired toppings, such as shredded lettuce, diced tomatoes, diced red onion, avocado slices, salsa, sour cream, lime wedges, and chopped cilantro.
- Wrap and serve: Fold in the sides of the tortilla and then roll it up tightly, like a burrito. Serve immediately.
Notes
- Shrimp: Use fresh or frozen shrimp. If using frozen shrimp, thaw completely before cooking.
- Old Bay Seasoning: Adjust the amount of Old Bay seasoning to your liking.
- Tortillas: Use large flour tortillas for easier wrapping. You can also use whole wheat tortillas for a healthier option.
- Toppings: Get creative with your toppings! Corn, bell peppers, or a creamy sauce are all delicious additions.
- Spice Level: For a spicier kick, add some chopped jalapeños or a dash of hot sauce to the shrimp while cooking.
