Instructions

  1. Season shrimp: In a medium bowl, toss the shrimp with the Old Bay seasoning.
  2. Cook shrimp: Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Do not overcook.
  3. Warm tortillas: While the shrimp are cooking, warm the tortillas according to package directions (microwave, skillet, or oven).
  4. Assemble burritos: Lay out the warm tortillas. In the center of each tortilla, place some cooked rice, black beans, cooked shrimp, and shredded cheese.
  5. Add toppings: Top with your desired toppings, such as shredded lettuce, diced tomatoes, diced red onion, avocado slices, salsa, sour cream, lime wedges, and chopped cilantro.
  6. Wrap and serve: Fold in the sides of the tortilla and then roll it up tightly, like a burrito. Serve immediately.

Notes

  • Shrimp: Use fresh or frozen shrimp. If using frozen shrimp, thaw completely before cooking.
  • Old Bay Seasoning: Adjust the amount of Old Bay seasoning to your liking.
  • Tortillas: Use large flour tortillas for easier wrapping. You can also use whole wheat tortillas for a healthier option.
  • Toppings: Get creative with your toppings! Corn, bell peppers, or a creamy sauce are all delicious additions.
  • Spice Level: For a spicier kick, add some chopped jalapeños or a dash of hot sauce to the shrimp while cooking.
