Instructions

  1. Preheat your oven to 450F and line a large sheet pan with parchment paper.
  2. Add the veggies and lemon slices to the prepared tray. Sprinkle with the seasonings, freshly squeezed lemon juice, and drizzle with 1 tbsp of the oil.
  3. Gently toss to coat everything.
  4. Bake in the preheated oven for 18-20 minutes.
  5. Remove from the oven and make some space for the salmon filets. Drizzle with the remaining oil and season to taste.
  6. Bake at 450F for 10-12 minutes, or until salmon is flaky and veggies are tender. Finish with squeezed lemon.

Notes

  • Be sure to cook the salmon until at least 145 degrees Fahrenheit. You can check the salmon with a meat thermometer.
  • Spice things up and use different veggies such as asparagus, brussels sprouts, broccoli, cauliflower, sweet potatoes, etc.
  • Instead of salmon, try chicken breasts or strips of steak. You can use different types of fish, too, such as tilapia or mahi-mahi.
  • Store any leftovers in an airtight container and place them in the refrigerator for up to four days. Reheat in the microwave when ready to eat.
