One-Pot Portuguese Sausage and Kale Soup

Made in just one pot, these Portuguese Sausage and Kale soup is sure to please the crowd and warm everyone up!

Ingredients
- 1 lb smoked sausage beef or pork
- 1/2 lb dry chorizo sausage chopped
- 64 ounces chicken broth
- 1 bunch kale chopped
- 4 potatoes cubed (any type)
- 1 cup carrots sliced
- 1 leek stalk thinly sliced
- 1 whole onion quartered
- 1 TB fresh garlic chopped
- 1 TB garlic powder
- 1 TB onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Instructions
- Add onions, leeks, sausage and chorizo to a large soup pot on medium heat. Saute in a tablespoon of cooking oil until onions start to brown.
- Add potatoes, carrots, kale, broth, garlic, garlic powder, and onion powder to pot and cook covered on medium-low heat for about 45 minutes. Add salt & pepper to taste before serving.
