Ingredients

  • 1 lb smoked sausage beef or pork
  • 1/2 lb dry chorizo sausage chopped
  • 64 ounces chicken broth
  • 1 bunch kale chopped
  • 4 potatoes cubed (any type)
  • 1 cup carrots sliced
  • 1 leek stalk thinly sliced
  • 1 whole onion quartered
  • 1 TB fresh garlic chopped
  • 1 TB garlic powder
  • 1 TB onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Add onions, leeks, sausage and chorizo to a large soup pot on medium heat. Saute in a tablespoon of cooking oil until onions start to brown.
  2. Add potatoes, carrots, kale, broth, garlic, garlic powder, and onion powder to pot and cook covered on medium-low heat for about 45 minutes. Add salt & pepper to taste before serving.
