One Skillet Easy Beef Stroganoff Recipe

One Skillet Easy Beef Stroganoff uses sirloin steak tips, sautéed with onions and mushrooms, and slow-simmered with broths, flour, and egg noodles, finishing with sour cream for a creamy sauce. The dry meat surface and hot skillet technique create flavorful browned beef, while the noodles cook directly in the sauce for an integrated, comforting dish.

Description

This recipe for One Skillet Easy Beef Stroganoff begins by cutting sirloin steak into thin strips, drying the meat to encourage browning in a hot skillet. The beef is cooked in batches to avoid crowding, and then set aside to rest. Onions and thinly sliced mushrooms are sautéed in the same skillet until the mushroom juices evaporate, enhancing their flavor. Flour is added to create a roux that thickens the sauce once chicken and beef broth are stirred in. The beef is returned to the pan along with wide egg noodles, which cook in the simmering liquid, absorbing flavors. Finally, sour cream and lemon juice are folded into the creamy sauce, along with fresh herbs like thyme or parsley, delivering a balanced tang and richness to the dish.

The method avoids excess liquid to ensure the noodles cook properly without becoming soggy, resulting in a silky, cohesive consistency. The steak tips provide tender bites with a caramelized crust, complementing the earthy mushrooms and bright finishing ingredients. This stroganoff is rich and hearty, suitable for a satisfying dinner.

The notes suggest that substitutions such as creme fraiche or Greek yogurt for sour cream can alter flavor and calorie content. Adding a small amount of white wine or brandy when adding the broth enhances depth of flavor if desired. Ensuring the beef is well-dried before cooking promotes better caramelization.

Ingredients

Servings
  • 1 1/2 lbs. sirloin steak tips
  • 4 tablespoons vegetable oil
  • 1 onion chopped, medium
  • 10 ounces white button mushrooms cleaned and sliced thinly
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth low sodium or homemade
  • 1 1/2 cups beef broth low sodium
  • 3 cups egg noodles wide
  • 2/3 cup sour cream
  • 2 teaspoons lemon juice freshly squeezed
  • 2 tablespoons thyme chopped, or Italian parsley, fresh
  • salt
  • black pepper

Instructions

  1. To prepare the meat: First, cut it into 2-inch strips towards the grain, and then cut each strip into 1/2-inch strips against the grain. Place it on a baking sheet lined with paper towels and pat-dry as much as possible. Season the meat with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  2. Heat 1-tablespoon oil in a 12-inch skillet over medium-high heat. Cook half of the meat, 4-5 minutes on each side. Transfer the cooked meat in a bowl. Repeat the same process for the other half. Cover it with aluminum foil and set aside.
  3. Once the meat is cooked, in the same skillet, heat the remaining 2 tablespoons oil. Add onion, mushroom, and 1/2 teaspoon salt, and cook, stirring frequently, until the juices of the mushrooms evaporate, 8-10 minutes.
  4. Add flour and cook, stirring constantly, for a minute.
  5. Stir in the chicken and beef broths. Scrape the bottom of the pan; making sure that all the bits and pieces of the meat is mixed in the liquid.
  6. Return the beef into the mixture. Put the lid on and let it cook over low heat until beef is tender for 25-30 minutes.
  7. Stir in the noodles, cover, and cook, stirring occasionally until noodles are cooked, 10 -12 minutes.
  8. Off the heat, add the sour cream and lemon juice. Give it a big stir.
  9. When ready to serve, garnish it with chopped thyme and/or fresh parsley.
  10. Serve.

Notes

  • Pat the beef dry before cooking to achieve caramelized, flavorful steak tips.
  • Cook egg noodles directly in the sauce; do not add extra liquid as noodles require less than pasta to cook properly.
  • For deeper flavor, add 1/3 cup white wine or brandy when adding broths.
  • Replace sour cream with creme fraiche for a richer sauce or Greek yogurt for a tangier, lower-calorie option.
