Orange Butter Cookies
Description
These Orange Butter Cookies start by creaming room-temperature butter with sugar until fluffy. Orange juice and grated zest contribute fresh and fragrant citrus tones to the dough. The dry ingredients, including flour, ammonium bicarbonate for leavening, and a pinch of salt, are gently mixed in. When the dough is too firm, a splash of milk is added to loosen it for piping or shaping. The cookies are baked at moderate heat until the edges turn light brown, then cooled on racks. Once cooled, melted dark chocolate is drizzled in thin strips to garnish and provide a hint of rich bitterness that complements the sweet orange notes.
These cookies work well alongside tea or coffee, offering a subtly sweet and aromatic bite. Their softness and mild rise come from the ammonium bicarbonate, setting them apart from typical butter cookies.
Ingredients
Ingredients
- 150 g butter
- 80 g sugar
- 1 egg large
- 2 tbsp of orange juice
- 280-300 g flour
- 1/3 tsp salt
- 1 ammonium bicarbonate level teaspoon; for cakes
- orange peel grated
- 50 g dark chocolate
Instructions
How to make ORANGE BUTTER COOKIES:
- Mix the soft butter at room temperature with the sugar until it becomes airy and creamy.
- Add the egg, grated orange zest, orange juice and mix well until fully incorporated.
- Separately mix the flour with the ammonium and salt.
- Gradually add flour to the butter cream and mix on low speed.
- If the mixture is too stiff, we can add 2 tablespoons of milk for fluidization.
- The mixture should be soft enough to be used in a garnish.
- I used a star tipped dui.
- Preheat the oven to medium heat and line the large baking tray with baking paper.
- Spread the cookies in the pan in the desired shape.
- Place the tray in the oven and bake the cookies for 13-15 minutes until lightly browned on the sides.
- Remove the tray from the oven and leave the cookies in the tray for another 10 minutes to harden and then transfer them to a grill to cool.
- Garnish the cookies with thin strips of melted chocolate. Let the chocolate harden.
- When they are ready, transfer the cookies to an airtight container. They last 1-2 weeks.
- Enjoy!
