Description
Orange Drizzle Cake is made by creaming butter and sugar until fluffy, then incorporating eggs and folding in self-raising flour combined with fresh orange zest. The batter is baked in a loaf pan, producing a golden crust with a soft interior. Once baked, holes are poked into the cake's surface and an orange juice and icing sugar glaze is poured over to soak in, adding moistness and a fresh citrus tang. This cake balances sweetness with the brightness of oranges, delivering a pleasant moist texture from the drizzle.
The use of both zest and juice provides layers of orange flavor, while the icing glaze enhances moistness and gives a subtle shine. The loaf shape offers easy slicing for serving with tea or coffee.
If the top browns too quickly during baking, loosely covering the cake with foil will help it cook through evenly without burning. For variety, lemon or lime zest and juice can be substituted for a slightly different citrus twist.
Ingredients
- 225 g butter
- 225 g caster sugar
- 4 egg
- 225 g self-raising flour
- 1 orange (juice and zest only)
- 90 g icing sugar
Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- Put 225 g Butter and 225 g Caster sugar into a large bowl and beat together until fluffy.
- Add 4 Eggs and whisk well.
- Add 225 g Self-raising flour and zest of 1 Orange and gently fold everything together until smooth. Don't over mix at this point.
- Pour into a loaf tin lined with baking paper. Put in the oven for 50-55 minutes, until a skewer comes out clean.
- Mix together 90 g Icing sugar and juice from 1 Orange. Using a fork or knife, make holes in the loaf and then pour the orange icing all over it.
- Leave to cool and then slice.
Notes
- For a stronger orange flavor, add zest from an additional orange without increasing the juice in the icing.
- Cover the cake with foil during baking if the top darkens too fast to prevent burning.
- Try swapping orange for lemon or lime zest and juice to vary the citrus note.
- Adding chocolate chips to the batter creates a chocolate-orange flavor contrast.
- Using an oven thermometer helps maintain the correct baking temperature to avoid undercooked or burnt cake.
- Do not over mix after adding flour and zest to keep the cake light and prevent it from becoming dense.
