Ostkaka/ Swedish Cheesecake

Ostkaka is a Swedish cheesecake made from cottage cheese, flour, milk, eggs, sugar, and almonds, flavored with lemon zest and juice. It is baked into a firm custard-like cake with a golden surface. The almonds add texture, while the citrus brightens the flavor. Served warm, it pairs well with berry sauce and lemon crème fraîche, creating a gentle balance of creamy, nutty, and tangy elements in a unique baked dessert.

Description

Ostkaka is prepared by mixing cottage cheese with all-purpose flour, milk, eggs, sugar, lemon zest and juice, finely chopped almonds, and a pinch of salt until smooth. The mixture is poured into a greased baking pan and baked at a high temperature until it is set and golden on top. The result is a baked cheesecake with a tender, slightly dense texture, contrasted by the delicate crunch and flavor from the chopped almonds. The inclusion of lemon zest and juice imparts a subtle brightness.

This traditional Swedish dessert is commonly enjoyed warm and complemented with a cold berry sauce or fresh strawberries and a dollop of lemon crème fraîche. This combination balances richness and acidity, enhancing the experience. The recipe yields a large rectangular cake, suitable for slicing into portions.
