Description
Ostkaka is prepared by mixing cottage cheese with all-purpose flour, milk, eggs, sugar, lemon zest and juice, finely chopped almonds, and a pinch of salt until smooth. The mixture is poured into a greased baking pan and baked at a high temperature until it is set and golden on top. The result is a baked cheesecake with a tender, slightly dense texture, contrasted by the delicate crunch and flavor from the chopped almonds. The inclusion of lemon zest and juice imparts a subtle brightness.
This traditional Swedish dessert is commonly enjoyed warm and complemented with a cold berry sauce or fresh strawberries and a dollop of lemon crème fraîche. Ingredients
- 500 g cottage cheese
- 75 g all-purpose flour
- 300 ml milk
- 3 egg medium size
- 75 g sugar
- lemon zest of half a lemon
- 1/2 tbsp lemon juice
- 60 g almond finely chopped, without skin
- 1 salt pinch
- butter for greasing
Instructions
- Preheat the oven to 225°C (437°F ) and grease a 30x40 cm (12 x16 ") oven tin.
- Mix all the ingredients in a mixing bowl until smooth and add to the greased tin.
- Bake the cake in the middle of the oven for 40-50 minutes until golden and set.
- Enjoy the cake warm with a cold berry sauce, strawberries and lemon creme fraiche.
