This oven baked fish with tomatoes and herbs is such an easy and flavorful recipe that can be made with salmon, cod or red snapper.

Ingredients

  • 2 firm fish fillets (salmon, cod or red snapper work well)
  • 1 lime juiced
  • 3 garlic cloves minced
  • ½ medium onion finely chopped
  • ½ cup chopped parsley
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • 1 teaspoon sweet paprika
  • 1 cup fresh tomato diced

Instructions

  1. Preheat oven to 375°F.
  2. In a medium bowl, mix the lime juice, garlic, parsley, onion, rosemary, thyme, paprika and tomatoes. Place the fillets in an unoiled baking dish and spread the topping over the fish.
  3. Cover tightly with foil and bake for about 25 minutes, until the fish flakes easily with a fork.
