These Palmiers are simple puff pastry cookies made with just three ingredients: puff pastry, sugar, and cinnamon. The dough is lightly coated with cinnamon sugar, rolled tightly from both sides to the center, sliced into cookies, and baked until crisp and caramelized. The cookies' flaky layers contrast with the sweet cinnamon crunch for a lightly spiced treat.

Description

Using all-butter puff pastry as the base, this recipe blends granulated sugar with cinnamon and divides it into portions to coat the dough and finish the cookies. The dough is sprinkled liberally with the cinnamon sugar mixture, then rolled from both long sides inward to create a palm-like shape. Slices cut from this rolled log reveal symmetrical hearts with layers of sugar.

The cookies are dipped in reserved cinnamon sugar before baking, which creates a caramelized crust during baking at 400°F. The result is flaky, crispy cookies with a tender interior marked by gentle cinnamon flavor. Their small size and simple ingredients make them an elegant snack or dessert.

If using frozen pastry, thaw fully before proceeding. These cookies keep best on the day they're baked but remain enjoyable the next day when stored in an airtight container. Cinnamon is optional for those preferring classic palmiers without spice.

  • 9 oz puff pastry preferably all-butter puff pastry, 260g, 1 sheet
  • cup granulated sugar 70g
  • 2 ½ teaspoons cinnamon

Instructions

  1. In a small bowl, combine the sugar with cinnamon together. Divide roughly into 3 parts: 2 very large and 1 very small.
  2. Sprinkle the first large portion of cinnamon sugar on the counter or on a rolling mat (roughly in the size of your puff pastry sheet). Place puff pastry sheet on top.
  3. Sprinkle the puff pastry with the second large portion of cinnamon sugar. Slightly roll it out to a rectangle (to thin out the pastry and so that the cinnamon sugar can stick to the pastry).
  4. Roll up the longer side of the dough in towards the middle, now roll up the other side in towards the middle (see photos).
  5. Use a sharp knife to cut the log into about ½-inch (1 cm) slices.
  6. Dip each side of the cookie into the reserved cinnamon sugar mixture (third part).
  7. Transfer the cookies to a parchment paper lined sheet pan, at least 1.5-inch (4 cm) apart to allow for the cookies to expand. Press the cookies lightly so they are of even thickness.
  8. Preheat the oven to 400°F (200°C). Put the sheet pan with the cookies in the fridge while the oven is warming up.
  9. Bake the cookies for 10 minutes, then flip them over and bake for a further 5-6 minutes or until golden in color. Towards the end of the baking time, keep an eye on the cookies, they can turn from golden brown to burnt very easily. When they´re golden, they´re done! Every oven bakes differently so baking time may vary.
  10. Let the cookies cool on the baking sheet.

  • Thaw frozen puff pastry overnight in the refrigerator before using for best results.
  • Palmiers taste best the day they're baked but can be stored in a sealed container for next day enjoyment.
