Pampushky (Ukrainian Sweet Donuts)

Pampushky are Ukrainian sweet yeast donuts filled with poppyseed or cherry mixtures. The dough is soft and elastic, enriched with eggs, butter, and milk, resulting in pillowy fried buns that hold a sweet, flavorful filling, making them a traditional indulgent treat.

Description

The dough is prepared by dissolving yeast and combining it with eggs, melted butter, milk, sugar, salt, and flour, kneading until soft and elastic. After rising twice, the dough is rolled out and cut into circles. Each circle is filled with either a poppyseed mixture—poppy seeds, raisins, honey, nuts, and oil—or a cherry filling with pitted cherries, sugar, crushed walnuts, and lemon juice.

The edges of the dough circles are pinched to seal the fillings, and the buns rest briefly before being deep-fried in hot sunflower oil at 375°F (190°C). They are fried until golden brown on both sides, resulting in sweet, tender, and aromatic donuts with contrasting fillings. Pampushky are traditionally served fresh to enjoy their softness and rich flavors.

Ingredients:

  • 2 packs yeast
  • 4 egg
  • 6 cups flour + more if necessary
  • 2 tbsp butter melted
  • 1 ½ pint milk
  • 2 tsp sugar
  • 1 tsp salt

Poppyseed filling

  • 4 oz poppy seeds
  • 4 oz raisins
  • 6 tbsp honey
  • 2.2 oz nuts
  • 1 tsp vegetable oil

Cherry filling

  • 1 lb Cherry pitted
  • sugar (to taste)
  • 1 oz walnuts crushed
  • 1 tsp lemon juice

Instructions

How to make Pampushky:

  1. Dissolve the yeast (as per instructions). Leave for 10 minutes.
  2. Pour part of the flour (6 cups) into a bowl. Make a well in the middle.
  3. Whisk the eggs lightly. Add the melted butter, milk, sugar, and salt.Mix with the flour and yeast.
  4. Mix thoroughly and knead until soft and not sticky. Add more flour if necessary.
  5. Knead for 10 minutes until homogenous and elastic.
  6. Cover and let rise in a warm pace until the dough doubles in volume. Punch down and knead lightly. Let rise again.
  7. Take a small amount of dough and roll it out on a floured surface. The dough should be thick.
  8. Cut out circles with a glass.
  9. Place a small amount of filling in the center of each circle. Bring the edges together. Pinch well to seal tightly.
  10. Place the pampushky seam-side down on a floured surface. Cover and let rise (approx. 15 minutes).
  11. Deep fry in sunflower oil, heated to 375 °F/ 190° C (approx. 3 minutes), turning to brown on both sides.
  12. When removing from the pan, leave most of the oil in the pan. Place the pаmpushky on paper towel to absorb any excess oil. 

Alternative fillings:

Poppyseed filling

  1. Grind the dry poppyseeds in a coffee grinder. Add to the moistened raisins.
  2. Combine the honey, nuts, and vegetable oil. Fold into the poppyseeds.

Cherry filling

  1. Boil the cherries until soft.
  2. Drain thoroughly. Put through a food processor or blender.
  3. Add the remaining ingredients.
  4. Blend thoroughly.
