Panikeke

Panikeke, also called lapotopoto, keke isite, or tama is a sweet, traditional donut from Samoa, Tonga and Palau.

Ingredients

Servings
  • 2 cups flour sifted
  • 2 teaspoons baking powder
  • ½ cup caster sugar
  • ¼ teaspoon salt
  • 1 egg
  • ½ cup milk or water
  • vegetable oil for frying

Equipment

  • Stand mixer

Instructions

  1. In the bowl of a stand mixer, mix all the ingredients (except the vegetable oil) until you have a thick dough of the same texture as a choux pastry. Add water if necessary.
  2. In a large pan, heat the oil over medium heat, at a temperature of about 350 F / 180 C.
  3. Form balls of dough with tablespoons or with your hands and fry them for 3 to 5 minutes until golden brown.
  4. Enjoy hot or warm.

Notes

  • If the temperature of the oil is too high, the panikeke will not be cooked inside. If the temperature is too low, the panikeke will be greasy. The use of a thermometer is therefore very important.
