  • salt and pepper to taste
  • 2 tablespoon olive oil
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes halved
  • 1 tablespoon fresh parsley chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow bowl, mix Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
  3. Coat each chicken breast with olive oil, then dip into the Parmesan mixture, pressing lightly to coat both sides.
  4. Arrange the chicken breasts on a baking sheet lined with parchment paper or foil.
  5. In a separate bowl, toss the baby carrots, broccoli florets, and cherry tomatoes with olive oil, salt, and pepper.
