Passion Fruit Curd

Passion Fruit Curd is a smooth, tangy spread made by cooking passion fruit pulp with eggs, sugar, and butter until thickened. It has a bright tropical flavor and creamy texture, often used as a topping or filling for desserts. The curd requires chilling before use to allow it to set properly.

Description

The Passion Fruit Curd blends passion fruit pulp, whole eggs and yolks, superfine sugar, and cold unsalted butter. The mixture is cooked gently over low to medium heat while whisked continuously to prevent curdling and to develop a thick, custard-like consistency that coats the back of a spoon. Straining removes any cooked egg bits, resulting in a smooth texture.

After cooking, the curd incorporates cubed cold butter for richness and smoothness, then is cooled thoroughly, typically for at least eight hours, to set. Its intense passion fruit flavor gives a bright, tart note balanced by the sweetness and richness from sugar and butter.

Commonly, passion fruit curd is used as a spread on toast, a filling for tarts or cakes, or a topping for scones. It can be stored refrigerated in an airtight container for up to two weeks, preserving its fresh flavor and texture.
