Passion Fruit Curd
Description
The Passion Fruit Curd blends passion fruit pulp, whole eggs and yolks, superfine sugar, and cold unsalted butter. The mixture is cooked gently over low to medium heat while whisked continuously to prevent curdling and to develop a thick, custard-like consistency that coats the back of a spoon. Straining removes any cooked egg bits, resulting in a smooth texture.
After cooking, the curd incorporates cubed cold butter for richness and smoothness, then is cooled thoroughly, typically for at least eight hours, to set. Its intense passion fruit flavor gives a bright, tart note balanced by the sweetness and richness from sugar and butter.
Commonly, passion fruit curd is used as a spread on toast, a filling for tarts or cakes, or a topping for scones. It can be stored refrigerated in an airtight container for up to two weeks, preserving its fresh flavor and texture.
Ingredients
- 3/4 cups passion fruit pulp
- 2 egg whole
- 2 egg yolk
- 1/2 tick butter unsalted, cold
- 1/2 cup superfine sugar
Instructions
- Combine the passion fruit pulp, the eggs, the yolks, and the sugar in a saucepan. Whisk to combine.
- Over low to medium heat, whisk the passion fruit mixture until it coats the back of a spoon.
- Strain into a bowl with the cubed cold butter. Whisk to combine.
- Transfer to a container and let it cool at least 8 hours before using.
Bom Apetite!
Notes
- Keep the curd refrigerated in an airtight container for up to 2 weeks to maintain freshness.
