Description
This Peach Amaretto Cobbler begins by layering thinly sliced peaches mixed with tapioca starch and amaretto in a baking dish. The tapioca starch helps thicken peach juices released during baking, while the amaretto adds a subtle almond flavor. The topping combines almond flour, tapioca starch, coconut sugar, baking powder, salt, and vanilla, bound with coconut oil to create a soft dough.
The dough is dropped in dollops atop the peaches and baked until golden and bubbling, with an option to cover loosely if browning occurs too quickly. After baking, the cobbler is cooled briefly to let juices set slightly.
It offers a balance of sweet, nutty, and fruity flavors with a comforting texture, making it suitable for dessert or special occasions. Serving with dairy-free vanilla ice cream complements the warm cobbler but is optional.
Ingredients
- 6 large peaches about 3 lb
- 1 tablespoon tapioca starch
- ⅓ cup amaretto
The Cobbler Topping
- 1 cup almond flour
- ¼ cup tapioca starch
- ⅓ cup coconut sugar
- 1 teaspoon baking powder
- ½ teaspoon salt sea salt
- 1 teaspoon vanilla
- ½ cup coconut oil
- ¼ cup almonds slivered
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Thinly slice the peaches (we like to leave the skin on) and put them in a 9x11-inch baking dish. Sprinkle the peaches with the tapioca starch and gently toss to combine. Pour the amaretto over the top.
- In a medium-sized bowl, mix all of the cobbler topping ingredients. Drop the dough in 6 pieces on top of the peaches and spread it out a little bit. You still want some peaches peeking out.
- Bake for 20 minutes and then check the cobbler - if it is starting to brown cover it loosely with aluminum foil. Continue to bake for 10 more minutes, or until the cobbler is juicy and bubbling.
- Remove the cobbler from the oven and let it cool for 15 minutes before digging in.
Notes
- Serving the cobbler with dairy-free vanilla ice cream adds a creamy contrast but is optional.
