Peanut Butter Rice Krispie Treats Recipe
Description
In this recipe, marshmallows, peanut butter, and butter are melted together until smooth, then vanilla is stirred in before folding in the Rice Krispies cereal. The mixture is pressed into a buttered 9x9-inch baking dish to set. After setting, a chocolate coating made by melting dark chocolate chips with vegetable oil is poured over the top, allowed to cool and harden, and finished with flaky sea salt sprinkled on top.
The treats combine chewy, nutty sweetness with the crunch of cereal and a smooth chocolate layer providing richness and slight bitterness. The sea salt adds a finishing touch that enhances the flavors and balances sweetness.
Using butter on the dish and optionally on hands during pressing prevents sticking and helps form neat squares after chilling. Cutting into squares after the chocolate hardens creates a treat suitable for snacks or dessert.
Ingredients
- 10 ounces marshmallows
- ½ cup peanut butter we like salted, natural
- 2 tablespoons butter
- 1 teaspoon vanilla
- 5 cups Rice Krispies
- ½ teaspoon sea salt flaky
Chocolate Topping
- 1 ½ cups dark chocolate chips
- 1 tablespoon vegetable oil
Instructions
- Grease the sides and bottom of a 9x9-inch baking dish with butter. (See notes) Melt the marshmallows, peanut butter, and butter in a large bowl in your microwave. (You can also do this step in a pot on low heat.)
- Once melted, stir in the vanilla. Add Rice Krispies and stir to combine.
- Transfer to the buttered baking dish and press down into the pan. (Lightly greasing your hands with butter helps prevent sticking.)
- Add the chocolate and oil to a small bowl and microwave for 30-second intervals until the chocolate has melted. Pour the chocolate over the Rice Krispie treats. Let the chocolate cool and harden slightly then sprinkle the top with flaky sea salt.
- Once the chocolate has hardened completely, remove the treats from the baking dish and cut it into squares.
Notes
- Grease the baking dish thoroughly with butter to prevent sticking and for easier removal.
- If stickiness is an issue, line the baking dish with parchment paper before pressing in the mixture.
