Ingredients
- 1 cup granulated sugar or a sugar free alternative like monk fruit
- 1 cup water filtered
- 1 teaspoon peppermint extract or 1/4 teaspoon peppermint oil
- mint leaves optional see notes
Instructions
- Place water and sweetener in a medium size saucepan. Heat over medium heat and stir until the sweetener dissolves and the liquid is clear.
- Remove from heat and add fresh mint leaves if desired. Steep for a minimum of 20 minutes. Taste.
- Add peppermint extract or peppermint oil. Stir until well dispersed in the syrup. Cool.
- Pour into a c2lean jar.
Notes
- For a sugar free peppermint syrup I have used monk fruit and Allulose. Monk fruit can be substituted for granulated sugar at a 1:1 ratio. If you use Allulose you will need about 1 1/3 cups to get the same sweetness as 1 cup of granulated sugar.
- To use mint leaves, steep 1/2-1 cup of fresh clean leaves in the simple syrup (step 2) for a minimum of 20 minutes. The longer it steeps the stronger the flavor will get. Taste and add additional extract or oil if desired.
