Pepperoni Pizza Chicken Recipe

This low-carb Pizza Chicken recipe has all the goodness of cheesy pizza without the guilt. It's one-skillet weeknight dinner the whole family will love!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breast boneless skinless
  • 1 ½ cups marinara sauce
  • 1 cup mozzarella cheese shredded, or provolone cheese
  • ½ cup pepperoni
  • 4 ounce can black olives optional
  • parsley for topping, optional, chopped
  • oregano for topping, optional, chopped

Instructions

Prep:

  1. Preheat oven to 350F.
  2. In a large, oven-safe skillet heat the oil over medium-high heat.

Cook the chicken:

  1. Add the chicken breast and sear for 2 minutes per side, until golden. Transfer to a plate.
  2. Remove the pan from heat and add 1 cup marinara sauce. Spread it evenly over the bottom of the pan. Nestle the chicken breasts into the sauce.
  3. Place the skillet into the oven and bake for 25 minutes.

Add toppings:

  1. Remove the chicken from the oven, top with reaming sauce, cheese, pepperoni, and black olives, if using.
  2. Place back into the oven and bake for another 10 minutes or until the cheese is melted and pepperoni slightly browned.

Notes

  • *I don’t like to scrimp on the cheese but if you wish, you could reduce the amount by half. You’ll still get some melted cheese action in each bite.
