Description
The Perfect 4-ingredient banana bread recipe requires ripe bananas mashed thoroughly then combined with eggs and sugar. Ingredients
- 350 grams banana weighed without skins, overripe
- 2 egg room temperature, large
- 120 grams light brown sugar
- 220 grams self-raising flour
Instructions
- Preheat the oven to 180C/356F/gas mark 4. Line a standard sized loaf tin with baking paper. A standard loaf tin is about 21cm long, 11cm wide and 7cm wide. Alternatively it's also known as a 2lb or 900g tin.
- Put the bananas in a bowl and mash them thoroughly with a fork. You can also use a stick blender.
- Add the eggs to the mashed bananas and whisk well.
- Add the sugar to the wet ingredients and whisk again.
- Add the flour and gently fold it into the mix with a spatula. Don't overmix and stop as soon as all the flour has been incorporated.
- Pour the mixture into the loaf tin.
- Bake for 40-45 minutes or until a cake tester comes out clean. Keep an eye on the banana bread. If you feel it's browning too fast after about 30 minutes, loosely place a piece of foil on top.
- Remove from the oven and leave to cool for 10 minutes. Gently tip the loaf out onto a cooling rack. Enjoy a warm slice with butter.
