  • 350 grams banana weighed without skins, overripe
  • 2 egg room temperature, large
  • 120 grams light brown sugar
  • 220 grams self-raising flour

Instructions

  1. Preheat the oven to 180C/356F/gas mark 4. Line a standard sized loaf tin with baking paper. A standard loaf tin is about 21cm long, 11cm wide and 7cm wide. Alternatively it's also known as a 2lb or 900g tin.
  2. Put the bananas in a bowl and mash them thoroughly with a fork. You can also use a stick blender.
  3. Add the eggs to the mashed bananas and whisk well.
  4. Add the sugar to the wet ingredients and whisk again.
  5. Add the flour and gently fold it into the mix with a spatula. Don't overmix and stop as soon as all the flour has been incorporated.
  6. Pour the mixture into the loaf tin.
  7. Bake for 40-45 minutes or until a cake tester comes out clean. Keep an eye on the banana bread. If you feel it's browning too fast after about 30 minutes, loosely place a piece of foil on top.
  8. Remove from the oven and leave to cool for 10 minutes. Gently tip the loaf out onto a cooling rack. Enjoy a warm slice with butter.
