Instructions

  1. Preheat the oven to 400℉. Place the rack in the middle position.
  2. In a small bowl combine the salt, pepper, Italian seasoning, garlic powder and onion powder together.
  3. Sprinkle the seasoning over the tenderloins and use your hands to rub the spices over the entire surface of the tenderloins, until they are evenly coated.
  4. Heat the olive oil and butter in a large oven safe skillet, such as a cast iron or a Dutch oven, over medium-high heat. Once the oil is hot, add the tenderloins and brown on all sides. Should take about 6 minutes in total.
  5. Place the skillet in the oven and bake uncovered for 13 to 15 minutes. Halfway through, flip the tenderloins over. Bake until the center of the tenderloin registers at least 150 F degrees.
  6. Transfer the tenderloins to a cutting board, cover them with aluminum foil and let them rest for at least 10 minutes before slicing.
  7. Garnish with parsley if preferred and serve.

Notes

  • Cooked tenderloin will last in the fridge for up to 3 - 4 days if it's stored in an airtight container. Be sure to freeze your pork within 2 hours of cooking to limit bacteria growth, and it'll last up to 3 months.
