Description
The Pichi Pichi recipe combines grated cassava with sugar, water, and a mild alkaline raising agent such as baking soda solution or lye water, producing a batter that rises and sets when steamed. The steaming process lasts about 20-30 minutes until the cakes turn translucent, indicating they are cooked through and have a pleasant, gummy texture.
After cooling, each piece is rolled in freshly grated coconut, adding a textured, mildly nutty exterior, or alternatively, it can be coated with grated cheese for a contrasting savory note. Ingredients
- 2 cups cassava no need to squeeze out liquids, grated
- ¾ cup sugar
- 1 ¾ cups water
- 2 teaspoons baking soda SEE NOTE 2) or 1 tsp lye water, solution
FOR COATING AND TOPPING
- 1 cup coconut - grated
- 1 cup cheese optional, grated
Instructions
- In a deep bowl, combine all ingredients together and mix thoroughly.
- Fill individual cup molds about three-quarter full or a bit more but leave some space because it can rise a bit while steaming.
- Arrange the filled molds in a steamer and steam for about 20-30 minutes or until they become translucent.
- Let them cool down completely so it is easier to remove from the molds, or place them in the fridge to shorten the cooling time.
- Roll each Pichi Pichi in grated coconut or grated cheese.
Notes
- If using fresh cassava, squeeze out excess liquid and use 2 cups of water instead of 1¾ cups.
- Prepare baking soda solution by dissolving ¼ teaspoon in 1 cup water, then boil for 5 minutes before use.
- For added flavor, pandan leaf water or extracts like buko-pandan or ube may be used in place of plain water.
