Pikliz Recipe (Spicy Haitian Pickled Slaw)

Pikliz is a spicy Haitian pickled slaw featuring shredded cabbage, red bell pepper, grated carrot, sliced onions, Scotch bonnet peppers, and garlic. The vegetables are submerged in a vinegar-based brine seasoned with salt, lime juice, and optional black pepper. After refrigerating for several days, the flavors meld into a tangy, spicy condiment that adds heat and crunch to meals.

Description

This recipe assembles an array of fresh vegetables including cabbage and bell pepper, combined with spicy Scotch bonnet or habanero peppers and minced garlic, to create a vibrant, crunchy slaw. The pickling brine consists of white vinegar, lime juice from half a lime, salt, and optional black pepper, which is poured over the vegetables to cover them completely.

The mixture is stored in a sealed jar in the refrigerator for at least three days to allow the flavors to develop and the vegetables to soften slightly while retaining crunch. Pikliz is commonly used in Haitian cuisine as a spicy accompaniment, adding acidity and heat to fried or grilled dishes.
