Pineapple and Coriander Salsa
Description
This Pineapple and Coriander Salsa uses fresh pineapple finely diced to retain as much juice as possible, paired with diced purple onion and red bell pepper for crunch and color. Fresh mint and coriander leaves contribute herbal freshness. The mixture is dressed with extra virgin olive oil and seasoned with sea salt flakes and freshly ground black pepper for balanced seasoning. Optionally, a small amount of brown sugar can be added when pineapple is out of season or not sweet enough, enhancing the natural sweetness and balancing acidity.
The salsa delivers a mix of juicy, crisp, and fresh textures with contrasting sweet and savory elements. It doesn’t require cooking, making it a convenient, vibrant addition that can brighten a meal. It suits use as a topping for grilled dishes, tacos, or as a fresh condiment alongside various proteins.
Adjust olive oil and seasoning according to taste preferences. Preparation is straightforward and allows flexible substitution of herbs, keeping the salsa fresh and lively.
