This pineapple coconut smoothie recipe is a tropical fruit delight that's both healthy and refreshing. It's dairy free, vegan and only contains 4 ingredients.

Ingredients
- 1 cup coconut milk
- Garnishes optional
- 1 banana fresh or frozen
- 2 sprigs of mint
- 2 cups of frozen pineapple
- 2 Lime wedges
- 1/4 cup sweetened flaked coconut
- 2 pineapple wedges
- coarse sugar

Instructions
- Place the coconut milk, banana, pineapple and coconut in a blender.
- Blend until completely smooth.
- For optional garnishes, dip the rim of 2 glasses into water and then into a plate of coarse sugar. Pour the smoothie into the glasses and place a mint sprig into each glass. Place a wedge of pineapple and lime onto the rims of the cups.
Notes
- You can use coconut milk or almond milk for this recipe, whichever you prefer.
- I typically use my blender at a high setting to puree the pineapple and banana chunks.
- If you want a thinner smoothie, feel free to add a little extra coconut milk.
