Pineapple Sheera
Description
This recipe combines ghee-roasted fine sooji (semolina), wheat flour, and besan to develop a golden, aromatic base. Fresh pineapple is simmered with sugar and water to create a flavorful syrup that is carefully incorporated into the roasted flours. The addition of saffron imparts a warm color and floral note.
The sheera is cooked gently until the mixture thickens into a creamy pudding with tender pineapple pieces throughout. Garnishing with sliced almonds and pistachios adds texture and nuttiness that complements the sweetness.
It is served warm as a comforting dessert. The recipe notes that fine sooji is preferred to achieve the ideal texture, but adjustments can be made with coarser sooji and hydration. Fresh pineapple is recommended, though pre-cut fruit can be used to reduce prep time.
Ingredients
- ¾ cup ghee
- 1 cup sooji fine
- ¼ cup wheat flour
- 2 tablespoons besan
- 3 to 4 cups pineapple cut into small ½ inch cubes, fresh
- 1 cup sugar
- 3 cups water
- 1 pinch saffron
- 1 tablespoon almonds sliced
- 1 tablesoon pistachios sliced
Instructions
- Add ghee to a medium non-stick pan. Add rava, wheat flour and besan. Roast on medium-low heat stirring frequently until the flours turn is golden brown and are aromatic. Will take about 5 to 7 minutes.
- In another pot add pineapple, sugar and water. Bring to a full boil stirring a few times. Will take about 10-15 minutes.
- Carefully add the pineapple syrup to the pan with roasted flours. Stir well to incorporate all the ingredients. Make sure to lower the heat as the sheera will start to splatter. Add saffron, cover the pan with a lid. Cook for 2-3 minutes on low heat.
- Add saffron. Turn off the heat and let it sit covered for 5 minutes. Garnish with almonds and pistachios. Enjoy warm.
- Note: You can press the Sheera in molds of any shape to make petite servings and then top them up the nuts.
Notes
- Using fresh pineapple is recommended, but pre-cut pineapple wedges from grocery stores can save preparation time.
- Fine sooji provides the best texture; if using coarse sooji, add extra water to avoid dryness in the sheera.
- Besan and wheat flour contribute earthy, nutty flavors and a creamy texture but can be omitted if preferred.
