Polvoron with Cashew

Polvoron with Cashew is a traditional crumbly Filipino shortbread made by toasting all-purpose flour, blending it with powdered milk, sugar, and ground cashews, then binding the mixture with melted butter. The texture is dry and powdery yet compact enough to hold its shape when molded and wrapped. This treat offers a nutty, sweet flavor and is typically enjoyed as a snack or dessert wrapped in paper.

Description

This polvoron recipe starts by toasting all-purpose flour over medium heat until lightly browned, which gives the final product a subtle roasted flavor. After removing the flour from heat, skim milk powder, sugar, and finely ground cashews are added and combined thoroughly. The addition of ground cashew adds a rich nutty dimension to the traditional polvoron.

Melted unsalted butter is incorporated last to bind the dry ingredients, creating a mixture that can be shaped using a polvoron molder. The molding process forms uniform, dense pieces that hold together despite the powdery texture. Each piece is wrapped in tissue or Japanese paper, preserving freshness and making them easy to handle.

This snack is often served at room temperature and favored for its sweet nuttiness and melt-in-the-mouth crumbly texture. It is suitable for gifting or enjoying as a light indulgence alongside tea or coffee. The method relies on careful toasting and mixing, enhancing flavor and ensuring a pleasant mouthfeel.
