Description
The recipe starts by combining tart pomegranate juice with fresh lime juice and a sweetener like simple syrup, allowing control over sweetness. A measured amount of tequila can be added for an adult variation or omitted entirely for a child-friendly version. The mix is poured into a freezer-friendly container and frozen, with intervals of scraping the ice crystals using a fork to achieve the granular granita texture.
This process transforms the liquid into a light, icy dessert with an appealing crystalline surface and refreshing sharpness from the lime. The granita can be served after a few rounds of scraping and a brief room temperature rest to soften slightly, ensuring easy portioning. This granita is ideal as a palate cleanser, light dessert, or a festive treat in warmer weather, combining the brightness of pomegranate and lime with a faint kick when tequila is included.
Ingredients
- 3 cups pomegranate juice about 24 fl ounces or 710ml
- ¼ to ½ cup simple syrup adjust based your preference or use your favorite sweetener
- lime juice juice from 2 limes
- 1 oz tequila add more for an adult version or to use in the sparkling pomegranate cocktail or omit completely for a child friendly dessert, 2 tablespoons
- pomegranate arils fresh, to garnish
Instructions
- Mix the pomegranate juice, lime juice, simple syrup and tequila.
- Place the mix intro a freezer friendly container.
- Put it in freezer for about 1 hour, then remove it and use a fork to mix it up.
- Put it back in the freezer and repeat an hour later, it will start to get harder so you will need to use the fork to scrape it until it has that crystal granita texture. Repeat one more time.
- Put it back in the freezer, before using it let it stand at room temperature for about 3-5 minutes and then use a fork to scratch it up before serving.
- Garnish with fresh pomegranate arils.
