Description

This recipe season boneless, center-cut pork chops with salt and pepper before searing them in butter until browned and cooked through. Simultaneously, sliced apples and red onions are cooked in butter and honey until softened and caramelized, with fresh or dried sage adding herbal depth.

After searing, the pork chops are returned to the pan with the caramelized apple and onion mixture. A sauce made from chicken stock and Dijon mustard is poured over, simmering until the pork reaches the proper internal temperature and the sauce thickens slightly. Toasted walnuts are sprinkled over at serving, providing crunch and an earthy contrast.

This dish combines sweet, savory, and nutty flavors, suitable for an autumnal dinner. The honey caramelized fruit complements the savory pork, while the sauce adds moisture and tang. Toasting walnuts enhances their flavor and texture.

  • 4 pork chop 1 ½ inches thick, boneless, center-cut
  • 1 teaspoon salt sea salt
  • 1 teaspoon black pepper sea salt
  • 2 tablespoons butter divided
  • 2 medium apple sliced ¼ inch thick
  • 1 medium red onion sliced ¼ inch thick
  • 2 tablespoons honey
  • 1 tablespoon sage or 1 teaspoon dried sage, chopped, fresh
  • ½ cup chicken stock
  • 1 teaspoon Dijon mustard
  • ½ cup walnut see notes, chopped, toasted

Instructions

  1. Season both sides of the pork chops with the salt and pepper. 
  2. Heat a large frying pan over medium-high heat. Add 1 tablespoon of the butter, let it melt, then add the pork chops to the pan. Sear the pork chops for 5 minutes on each side, reducing the heat if they become too brown. Remove them from the pan.
  3. While the pork cooks, chop the apples and onion. Add the remaining 1 tablespoon of butter to the pan with the apples, red onion, and honey and let them cook for 3 minutes, or until they just start to soften. Stir in the sage. 
  4. Nestle the pork chops back into the pan. Mix the chicken stock and dijon mustard together then pour it into the pan. Simmer the pork chops for another 8-10 minutes, or until they reach an internal temperature of 145 degrees Fahrenheit. 
  5. Serve the pork chops and apples with the walnuts sprinkled over the top.

Notes

  • Toast walnuts at 375°F for 6-8 minutes until fragrant and slightly browned to enhance flavor and texture.
