Portuguese Seafood Stew
Description
The stew begins by sautéing minced garlic and chopped onion in olive oil to create a soft, fragrant base. Chorizo slices add a smoky, spiced flavor to the mix before diced ripe tomatoes, white wine, water, and a bay leaf are added and simmered to develop depth. Clams are introduced next and cooked until they open, contributing briny notes to the broth. The shrimp and bay scallops are added last, cooking just until opaque and tender, preventing overcooking.
The resulting stew offers a harmonious seafood presentation with the robust character of chorizo and fresh parsley for brightness. The broth is light but flavorful, enhanced by wine acidity and fresh black pepper seasoning. It highlights the natural tastes of the seafood enhanced subtly by the sausage and aromatics.
Serve this stew hot in bowls, garnished with chopped parsley. It pairs well with crusty bread to soak up the broth and is ideal for sharing with guests or family in a casual dinner setting.
