Description
This recipe begins with a dough made from all-purpose flour, baking powder, salt, butter, brown and granulated sugars, vanilla extract, and a large egg. After beating together wet and dry ingredients, the dough is divided into six bowls, with each portion dyed using a distinct color of food coloring representing the colors of the rainbow.
The colored dough is then portioned by teaspoonfuls onto a baking sheet, with dough of different colors placed so they touch, forming a multicolor pattern. When baked at 350 degrees Fahrenheit for about 9 to 10 minutes, the cookies maintain their colorful swirls and avoid fading by watching bake time carefully. The result is soft cookies with distinct patches of color.
If the dough becomes sticky during handling—often due to warmth while coloring and assembling—it can be chilled in the refrigerator briefly to firm up for easier shaping. The cookies are best served fresh to maintain their bright colors and tender crumb.
Ingredients
- 2 ¾ cups all-purpose flour
- 1 teaspoons baking powder
- ½ teaspoon salt sea salt
- 1 cup butter at room temperature
- ½ cup brown sugar packed
- ½ cup granulated sugar
- 2 teaspoons vanilla extract pure
- 1 large egg
- Food Coloring red, orange, yellow, green, blue, and purple
Instructions
- Preheat the oven to 350 degrees. In a medium-sized bowl, whisk the flour, baking powder, and salt.
- In a large bowl, use an electric beater to beat the butter and both sugars until light and fluffy, about 2 minutes. Add the egg and vanilla and beat to combine.
- Add the dry ingredients to the wet ingredients and beat, scraping the sides of the bowl a few times with a rubber spatula, until a stiff dough forms.
- Divide the dough into 6 small bowls. Add a few drops of the food coloring to the bowls, one color per bowl, and stir until the color is incorporated.
- Working with one color at a time put 1 teaspoon of the dough on 9 evenly spaced spots on one of the baking sheets. Next, put another teaspoon of another color of dough so it touches the first color. Repeat until each cookie has all 6 colors.
- Bake the cookies for 9-10 minutes. Make sure not to overcook them or the colors will start to fade. To make the cookies perfectly round, as soon as they come out of the oven, place a cup slightly larger than the cookie over the top and swirl it around gently. Transfer the cookies to a cooling rack and let them cook completely before you store them.
Notes
- To ease handling, if the dough gets sticky while coloring or assembling, refrigerate the unbaked cookies for about 10 minutes to firm up.
