Puffed Quinoa Peanut Butter Chocolate Bars Recipe

Ingredients

  • 3 quinoa puffs 3 ¼ cups
  • 1 ½ cups peanut butter
  • 6 tbsp. hemp seed
  • 1 tbsp. vanilla extract brand SO
  • 2 tsp. vanilla paste brand SO
  • 1/3 cup maple syrup
  • Pinch salt
  • 1 cup dark chocolate chips vegan, 2 tbsp
  • 1 tbsp. coconut oil
  • salt extra flaky

Instructions

  1. Prepare an 8x8 inch pan with parchment paper and set aside.
  2. To a large bowl, add the quinoa puffs, peanut butter, hemp seeds, vanilla extract, vanilla paste, maple syrup, and salt. 
  3. Mix with a wooden spoon to combine.
  4. Transfer the puffed quinoa to the prepared pan and firmly press down.
  5. In a small bowl, combine the dark chocolate chips and coconut oil.
  6. Melt the two ingredients together in the microwave, mix together.
  7. Pour over top of the pressed-down quinoa puffs, and spread evenly
  8. Set in the fridge for 3 – 5 minutes, add flaky salt on top, and set in the fridge until chocolate is firm.  
  9. After about 10 – 15 minutes, cut into 16 equal pieces and enjoy!!

  • Use ANY nut butter that you want. Customize it! Even add other delicious ingredients on the inside like; mini chocolate chips, nuts, cinnamon, coconut, anything!
