Ingredients

  • 1/4 cup canola oil
  • 1/4 cup butter softened
  • 1/3 cup granulated sugar
  • 2/3 cup light brown sugar packed
  • 2 eggs at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree
  • 1 1/2 cups all purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon or pumpkin spice

Instructions

  1. Preheat oven to 350° F. Line a light-colored loaf pan (8 1/2" x 4 1/2" x 2 3/4” high) with parchment paper then grease with nonstick cooking spray. Set aside.
  2. In a large bowl, mix oil, butter, and sugars until well combined.
  3. Stir in eggs, vanilla extract, and pumpkin until smooth.
  4. Gently stir in dry ingredients until a uniform batter has formed. Scrape sides to ensure no lumps are present.
  5. Pour prepared batter into pan. Spread it evenly across the top. Sprinkle with pepitas, if desired.
  6. Bake 45-50 minutes or until a toothpick comes out with a few moist crumbs.
  7. Cool 10 minutes before loosening edges and removing loaf from pan. Slice into pieces and serve warm or at room temperature.
