Ingredients
For Pumpkin Hummus*
- 1 can garbanzo beans drained
- 1/2 Cup Tahini
- 2 Teaspoons cumin or to taste
- 1/2 Teaspoon paprika
- 1 Teaspoon fresh lemon juice
- 1 Clove garlic crushed
- 1/4 Cup extra virgin olive oil
- 1/2 Cup pumpkin puree
- salt and pepper to taste
For Pizza
- 1 can refrigerated pizza dough store bought pizza dough or homemade
- ¼ Cup chopped red onions
- ¼ Cup chopped tomatoes
- ½ Cup goat cheese crumbled
- 1/4 Cup spinach chopped
- salt and pepper
- olive oil
Instructions
- For Pumpkin Hummus
- Place all ingredients on a food processor. Process until smooth
- Taste for seasoning, add more if needed
- For Pizza
- Preheat oven to 425 degrees Fahrenheit
- Line a sheet pan with parchment paper
- Place the pizza dough on top of the parchment paper
- Bake for 5 minutes
- Remove from oven
- Spread pumpkin Hummus over the the pizza
- Add the veggies
- Sprinkle in the cheese
- Add salt and pepper
- Drizzle olive oil on top
- Bake for 5-7 minutes or until cheese has toasted up
- Enjoy!
Notes
- *If you're in a hurry you can use store bought hummus and just add 1/2 cup of pumpkin puree.
